Elder Spencer #2. And Gooey Butter.

Clayton is the 2nd Spencer grandchild to serve a mission.  He spoke in Sacrament Meeting and we were happy to go and listen.  Greg came and it was exciting to sit next to him on the bench.  He lasted about 10 minutes before standing up with Cece in the back.

That night we went to Todd and Rachel's for a potluck.  I was reminded after Cece's blessing (when my mom brought Gooey Butter to our event) that I haven't brought Gooey Butter to a Spencer potluck in years.

The original recipe uses a yellow cake mix in the bottom layer.  Kiera and Ellie went to the storage room to get ingredients for me, and discovered I didn't have a yellow cake mix.  I googled how to make your own and we were in business.

Gooey Butter has been my favorite dessert since I can remember.  I request it in lieu of birthday cake for my birthday.  It is pretty much perfection, and I didn't think the recipe could be improved on.  

But making my own bottom layer made it even better!

It was lighter, flakier, and just plain tasted awesome.  And it is less processed.  I'm converted!  It went fast at the party, and Daniel even scraped out all of the crumbs.

My updated version of 
Gooey Butter

2 1/3 cups all purpose flour
1/3 cup nonfat dry milk
3 teaspoons baking powder
3/4 teaspoon salt
1 1/2 cups sugar

Mix dry ingredients together and add 1 egg, 1 tsp of vanilla, and 2 sticks of softened butter.  Press in bottom of 9x13 pan.

Cream together 1 package of softened cream cheese, 2 eggs, and 1 tsp of vanilla.  Gradually add 3-4 cups of powdered sugar, until the mixture has some substance but is still runny.  Pour on top of cake mixture.

Bake at 325 degrees for 30-45 minutes, until the top is golden brown and set.

Photo Shoot with {R}

{R} was very gracious and agreed to come over for dinner all dressed up so I could take pictures of her and Cece together, with Cece in her gorgeous sealing/blessing dress.  Cece was tired and not that happy, but we had a good time anyway!

903 E Pratt

Greg is in Chicago for a business meeting, and was spending the night with Uncle Clay.  He kindly did a drive by of the house I grew up in and took a picture.  

Lots of memories!  Like the time I took the mirror off of the van trying to back out of the garage.  I was driving the sister missionaries somewhere (obviously not driving them very well) and they were waiting on the driveway.  In trying to go back and forth and get myself to the correct angle, I started panicking and got the van kind of wedged in.  One of the Sisters climbed in the back door of the van and over the seats to get to the driver's seat, and dislodged the van.

Lots of better memories, too, like spending hours in the crab apple tree.  There was one limb that was just right for me, and I would climb up in the leaves and blossoms and read for hours.

Or hanging out on the front porch, playing Uno with Amy and our friend Laurie.

Or laying on the front lawn, using Candy as a pillow, to watch clouds.  Or talk to Amy.  Or read.

It seems like I spent a lot of time in the front yard reading!

Cece and the iPad

I was getting ready this morning, and came out to find that Ellie had given Cece the iPad to play with.  Um, she is probably a little to...little for that!  Ellie kindly picked the Monkey Drum app and Cece was fascinated with the monkey.  She danced to the music and kept on laughing.

Visiting Swig

Our visiting teachee, Syd, likes to go on adventures.  This month we met at Swig to do our visiting teaching.  I have never been before, and the coconut/lime/diet coke that I had was delicious.  I got a sugar cookie for the girls and Ellie tried the Fruit Loop drink, which was Sprite with a few fruit flavored syrups mixed in.  She liked, but then got a huge sugar rush, and subsequent crash.  She's never had that much sugar at once before.  Her tummy really hurt on the way home, and it was a good learning experience.  She even said to me, "is this why you always tell me not to have too much sugar?"

The children loved swinging on the swings and the adults were able to visit.  Great idea, Syd!

P.S.  I have heard of the famous Swig sugar cookies, and I have even made a knock-off recipe a couple of times.  I have to say, I liked the recipes I have made at home better than the real deal.  I like the Sweet Tooth Fairy knock-off bar cookie combined with the Swig knock-off frosting.  Delicious!

Cinnamon Toast

Ellie is funny.  She has taken the position since she was really little that she doesn't like sandwich bread.  But she likes rolls, garlic toast, bread sticks -- anything bread-like that isn't in the shape of sandwich bread.

I got her to try cinnamon toast today and she loved it.  She told me that she must like bread when it is cooked because she also likes french toast.

Ogden Temple Open House

We were able to tour the Ogden Temple on our way home from Logan.  Ellie and Lynnie were fascinated, especially coming so soon after having been in the Jordan River Temple.

President Monson wrote: "The late Elder Matthew Cowley, who was a member of the Quorum of the Twelve Apostles, once recounted the Saturday afternoon experience of a grandfather as hand in hand he took his small granddaughter on a birthday visit—not to the zoo or to the movies but to the temple grounds. With permission of the groundskeeper, the two walked to the large doors of the temple. He suggested that she place her hand on the sturdy wall and then on the massive door. Tenderly he then said to her, “Remember that this day you touched the temple. One day you will go inside.” His gift to the little one was not candy or ice cream but an experience far more significant and everlasting—an appreciation of the house of the Lord. She had touched the temple, and the temple had touched her."

Hotel Pool

We decided on Thursday to make the trip to Logan for Friday-Saturday to go to Caity's wedding.  One of the best parts was watching Ellie and Lynnie swim with Daddy and Uncle Kyle in the afternoon.

Kyle and Jonette came down last weekend for Cece's sealing and they are coming back to Utah this weekend for Caity's wedding.  They left Kaysen here for the week so he could play with the cousins.  Although, when you are 15, do you "play" anymore?

I got to drive him to a doctor's appointment at Primary Children's on Thursday (he's totally fine).  It was so fun to spend time with him!  I realized that even though we have spent a lot of time together over the years, someone else is with us as well.  It's been a long time since it was just the two of us conversing.  Cece was with us, but she didn't have a lot to say ;)

P.S.  Kaysen totally rocks at the selfie.  I decided I am so challenged at it because my arms are simply not long enough!  Kays put his nice, long arm straight out, and made it look so easy.

Lego Friends

Ellie got a lot of very nice presents for her birthday, and she played with everything immediately.  Except for her Lego Friends from Davis, which she waited to do until the next morning.  This is the biggest set she has, and she worked on them by herself for over an hour, before asking Daddy for some help to do the car.

Cecilia's Sealing

We spent a wonderful morning in the Jordan River Temple, where Cece was sealed to our family.  Such precious girls!  Such a good reminder of why we are here on earth, and to reflect on the amazing birth parents in our lives.

Cece got sick Tuesday night, and I attributed it to her shots early that day.  Until Ellie threw up on Wednesday morning and I got sick Wednesday night.  I thought we had kept Lynnie out of it.

No such luck.

She threw up at 5 p.m. and had a rough night.

Luckily I know she won't be sick long, since Cece and Ellie are already all better.
